  • 2 tbsp chili powder
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup shredded sharp cheddar cheese

  1. Cook elbow macaroni in salted water according to package directions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, brown the ground beef until fully cooked, breaking it apart as it cooks.
  3. Sprinkle in the chili powder along with salt and pepper to taste. Stir for about one minute until fragrant.
  4. Add diced tomatoes (with juices) and kidney beans; stir well and let simmer for five minutes.
  5. Fold in the cooked macaroni until evenly mixed. If too thick, add a splash of water or broth.
  6. Transfer to a baking dish or keep in skillet if oven-safe; top with shredded cheddar cheese. Broil for five minutes until bubbly and golden.
