  • 2 lbs beef chuck roast, cut into bite-sized pieces
  • 4 medium carrots, chopped
  • 4 medium Yukon Gold potatoes, cubed
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Chop the vegetables and season the beef with salt and pepper.
  2. In a large pot or Dutch oven, heat oil over medium-high heat. Brown the beef on all sides before removing it from the pot.
  3. Add onions and garlic to the pot; sauté until fragrant. Stir in carrots.
  4. Return the beef to the pot; add broth, tomato paste, and thyme. Bring to a simmer.
  5. After ten minutes, add potatoes and continue simmering for about 30 minutes or until tender.
  6. Adjust seasoning before serving in bowls garnished with parsley if desired.
