  • 1 block (14 oz) firm tofu, pressed and cubed
  • 1 cup cucumbers, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/4 cup feta cheese (optional), crumbled
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Press the tofu to remove excess moisture, then cut into bite-sized cubes.
  2. In a large bowl, combine cubed tofu, diced cucumbers, halved cherry tomatoes, sliced red onion, Kalamata olives, and feta cheese if using.
  3. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper until well blended.
  4. Pour the dressing over the salad mixture and gently toss until everything is evenly coated.
  5. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
