  • 4 bell peppers (red, yellow, or orange)
  • 1.5 lbs boneless skinless chicken breasts (about 3 breasts)
  • 2 cups cooked rice (white or brown)
  • 1 oz taco seasoning (1 packet)
  • 1 cup shredded cheddar cheese
  • 1 cup tomato sauce

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. Boil chicken breasts in water for 15–20 minutes until fully cooked. Shred using two forks.
  3. In a bowl, combine shredded chicken, cooked rice, taco seasoning, and tomato sauce until mixed well.
  4. Cut the tops off the bell peppers and remove seeds. Fill each pepper generously with the chicken-rice mixture.
  5. Sprinkle shredded cheese over the stuffed peppers and place them upright in the baking dish.
  6. Cover with foil and bake for 25 minutes; then remove foil and bake an additional 10 minutes until cheese is bubbly.
