  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 2 chipotle peppers in adobo sauce
  • 1 cup low-sodium chicken broth
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 2 cups shredded green cabbage
  • Juice of 1 lime

Instructions

  1. Set the Instant Pot to sauté mode. Add a splash of olive oil and sauté chopped onions and minced garlic until fragrant.
  2. Season the chicken breasts with salt and pepper, then add them to the pot and brown each side for about three minutes.
  3. Stir in diced tomatoes, chipotle peppers, chicken broth, cumin, and oregano; mix well.
  4. Seal the lid and set the Instant Pot to manual pressure cook for 10 minutes.
  5. Once done, carefully release pressure and shred the chicken using two forks.
  6. Return shredded chicken to the pot and mix with the sauce.
  7. Serve warm topped with shredded cabbage and a squeeze of lime juice.
