  • 34 boneless, skinless chicken breasts (1 lb)
  • 2 tsp Cajun seasoning
  • 8 oz pasta (fettuccine or penne)
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 medium yellow onion (diced)
  • 1 cup fresh bell peppers (sliced, mixed colors)
  • 3 cloves garlic (minced)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • ½ cup Parmesan cheese (freshly grated)

Instructions

  1. Dice the chicken breasts and season with Cajun seasoning.
  2. Boil water in a large pot and cook the pasta according to package instructions; drain and set aside.
  3. Heat olive oil in a skillet over medium-high heat and cook the seasoned chicken until golden brown (5-7 minutes). Remove from skillet.
  4. In the same skillet, sauté onions and bell peppers until softened (about 5 minutes). Add minced garlic and cook until fragrant.
  5. Stir in the chicken broth and heavy cream; let simmer until slightly thickened (about 5 minutes).
  6. Return the cooked chicken to the skillet, add pasta, and toss everything together. Adjust consistency with reserved pasta water if needed.
  7. Serve hot topped with freshly grated Parmesan cheese.
