  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, diced
  • 2 tablespoons taco seasoning
  • 1 can (14.5 oz) diced tomatoes with green chilies, drained
  • 1 cup sour cream
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • Nonstick cooking spray

Instructions

  1. Preheat oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. In a skillet over medium heat, add olive oil. Sauté diced chicken seasoned with taco seasoning until cooked through (7-10 minutes).
  3. Add sliced bell peppers and onion; cook for an additional 5 minutes until softened.
  4. In a bowl, mix drained diced tomatoes with sour cream until well combined.
  5. Layer half of the chicken mixture in the baking dish, top with half of the creamy tomato mixture and half of the cheese. Repeat layers.
  6. Bake for 25-30 minutes until bubbly and golden brown. Let cool before serving.
