  • 1 lb lean ground beef
  • 1 lb Italian sausage (spicy or mild)
  • 4 cups fresh spinach
  • 4 cloves garlic, minced
  • 4 tbsp unsalted butter
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook rotini pasta in salted boiling water according to package instructions until al dente. Reserve ½ cup of pasta water, then drain.
  2. In a large skillet over medium heat, melt 2 tablespoons of butter. Add ground beef and Italian sausage; cook until browned (about 5-7 minutes), breaking apart large chunks.
  3. Stir in minced garlic and sauté for 1 minute until fragrant.
  4. Add fresh spinach to the skillet along with drained rotini pasta. Gradually pour in reserved pasta water while stirring to combine. Cook until spinach wilts (about 2 minutes).
  5. Stir in remaining butter until melted and coat all ingredients evenly. Season with salt and pepper to taste.
  6. Serve hot, garnished with grated Parmesan cheese.
