  • 4 lamb shanks (about 2.5 lbs total)
  • 2 tbsp olive oil
  • 6 cloves fresh garlic, minced
  • 3 sprigs fresh rosemary, chopped
  • 2 cups vegetable broth
  • 1 cup red wine
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat. Season lamb shanks with salt and pepper, then sear on all sides until browned (4-5 minutes per side). Remove from pot.
  3. Add minced garlic and chopped rosemary to the pot; sauté for about 1 minute until fragrant. Deglaze with red wine, scraping up any browned bits.
  4. Return lamb shanks to the pot along with vegetable broth (shanks should be mostly submerged).
  5. Cover and roast in the oven for 2.5 to 3 hours or until fork-tender.
  6. Let rest for a few minutes before serving; spoon sauce over shanks.
