  • 8 oz fresh cremini or button mushrooms, sliced
  • 4 garlic cloves, minced
  • 1/4 cup freshly squeezed lemon juice
  • 1 cup low-sodium chicken broth
  • 2 tbsp capers
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Pat chicken breasts dry and season both sides with salt and pepper.
  2. In a large skillet over medium-high heat, add olive oil. Once hot, sauté chicken for about 5 minutes on each side until golden brown and cooked through.
