  • 2 lbs pork shoulder, cut into chunks
  • 1 cup chicken broth
  • 2 cups corn masa flour
  • 1/4 cup vegetable oil
  • 10 dried corn husks (soaked)
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tsp chili powder

Instructions

  1. Season the pork with salt and pepper. In the Instant Pot on 'Sauté' mode, brown the pork in oil for 8 minutes.
  2. Add onion, garlic, and chili powder; stir until fragrant (about 2 minutes).
  3. Pour in chicken broth, secure the lid, and cook on high pressure for 60 minutes.
  4. Mix corn masa flour with vegetable oil and warm water until smooth; let it rest.
  5. Shred cooked pork and assemble tamales: spread masa on soaked corn husks, add pork filling, fold and secure.
  6. Steam tamales upright in the Instant Pot for another 20 minutes.
