  • 2 lbs beef chuck roast, cut into cubes
  • 2 medium onions, chopped
  • 4 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 tbsp tomato paste
  • 2 tsp dried oregano
  • 1 cinnamon stick
  • 1 cup red wine
  • 2 cups orzo or pasta
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, warm a splash of olive oil. Season beef with salt and pepper. Brown beef cubes in batches until seared on all sides. Set aside.
  2. In the same pot, sauté chopped onions and minced garlic until translucent (about 5 minutes).
  3. Add sliced carrots and tomato paste; cook for another 2 minutes.
  4. Pour in red wine, scraping up browned bits from the bottom. Simmer for about 5 minutes until slightly reduced.
  5. Return beef to the pot with oregano, cinnamon stick, and enough water or broth to cover the ingredients. Bring to a boil then reduce heat and simmer covered for 1.5 to 2 hours.
  6. Cook pasta or orzo according to package instructions until al dente. Drain.
  7. Serve stew over pasta or orzo for a comforting meal.
