  • 1 cup dry red wine (Cabernet Sauvignon or Merlot)
  • 3 medium carrots, sliced into thick rounds
  • 2 medium yellow onions, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 4 sprigs fresh thyme
  • 2 bay leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Prepare the ingredients: Chop the beef, slice the carrots and onions, and mince the garlic.
  2. 2. In a large Dutch oven over medium-high heat, add olive oil. Sear the beef in batches until browned on all sides. Remove and set aside.

  4. 4. Deglaze with red wine, scraping up browned bits from the bottom; simmer for 5 minutes until slightly reduced.
