  • 1/2 cup chopped onion
  • 2 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a 9×13 inch baking dish.
  2. In a skillet over medium heat, brown the ground beef until fully cooked; drain excess grease.
  3. Add chopped onions and bell peppers to the skillet; cook for about 5 minutes until softened. Season with salt, pepper, and chili powder.
  4. Stir in the sweet corn until well combined; remove from heat.
  5. Prepare the cornbread mix according to package instructions in a separate bowl.
  6. Spread the beef mixture evenly in the prepared baking dish. Top with cornbread batter without mixing it into the filling beneath.
