  • 2 medium leeks, cleaned and sliced
  • 8 oz cremini or shiitake mushrooms, sliced
  • 3 medium carrots, chopped into rounds
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tbsp olive oil
  • 1 tsp fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients by chopping the meat, leeks, mushrooms, and carrots; mince the garlic.
  2. In a large pot, heat olive oil over medium-high heat. Sear the meat until browned on all sides; remove and set aside.
  3. In the same pot, lower heat slightly and sauté leeks, carrots, and mushrooms for about 5 minutes until softened.
  4. Add garlic, thyme, bay leaves, salt, and pepper; cook for an additional minute until fragrant.
  5. Return the meat to the pot and add beef broth. Bring to a boil then reduce heat to low. Cover and simmer for about 2 hours until the meat is tender.
  6. Serve hot with crusty bread or creamy mashed potatoes.
