  • 4 cups green cabbage, chopped
  • 2 medium carrots, sliced
  • 2 stalks celery, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes in juice
  • 4 cups low-sodium vegetable broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Chop cabbage into bite-sized pieces, slice carrots thinly, and chop celery and onion.
  2. In a large pot over medium heat, heat olive oil. Add onions and garlic; sauté until fragrant (about 3 minutes).
  3. Stir in cabbage, carrots, and celery; cook for another 5 minutes until slightly softened.
  4. Add diced tomatoes (with juices) and vegetable broth. Bring to a boil then reduce to simmer for about 20 minutes.
  5. Add bay leaves, thyme, salt, and pepper; let simmer uncovered for an additional 10 minutes.
  6. Remove bay leaves before serving hot with crusty bread or fresh herbs.
