Instructions

  1. Rinse asparagus under cold water and trim off woody ends. Use a vegetable peeler or mandoline to shave into thin ribbons.
  2. Blanch peas in boiling water for about 2 minutes until bright green. Drain and transfer to ice-cold water to stop cooking.
  3. In a large bowl, combine shaved asparagus, blanched peas, and lemon zest. Season with salt and pepper.
