  • 2 tablespoons toasted sesame oil
  • 3 tablespoons unseasoned rice vinegar
  • 2 tablespoons low-sodium soy sauce
  • 1 teaspoon sugar
  • 2 tablespoons toasted sesame seeds
  • 2 green onions (sliced)
  • ¼ cup fresh cilantro (chopped) – Optional garnish

Instructions

  1. Wash cucumbers thoroughly and slice them thinly (about ¼ inch thick). Peel if using regular cucumbers.
  2. In a small bowl, whisk together sesame oil, rice vinegar, soy sauce, and sugar until smooth.
  3. In a large bowl, toss sliced cucumbers with green onions and sesame seeds. Pour the dressing over and mix gently until well coated.
  4. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  5. Before serving, give it another gentle toss and garnish with cilantro if desired.
