  • 2 pounds Yukon Gold potatoes, diced
  • 2 fresh oranges, segmented and zested
  • 1/2 cup red onion, finely diced
  • 1/2 cup celery, finely chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Boil the diced Yukon Gold potatoes in salted water until fork-tender (10-15 minutes). Drain and let cool.
  2. While the potatoes cook, zest one orange and segment both oranges into juicy pieces. Set aside.
  3. In a bowl, whisk together mayonnaise, Dijon mustard, orange zest, salt, and pepper for the dressing.
  4. In a large bowl, combine cooled potatoes, orange segments, red onion, celery, and dressing. Gently mix until well combined.
  5. Refrigerate for at least one hour to allow flavors to meld. Garnish with fresh parsley before serving.
