  • 2 cups fresh cucumbers, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and halved
  • 1 cup feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1/4 cup fresh parsley or mint, chopped
  • Salt and black pepper to taste

Instructions

  1. Wash all vegetables thoroughly. Dice the cucumbers, halve the cherry tomatoes, and slice the red onion.
  2. In a large bowl, combine the cucumbers, cherry tomatoes, olives, and red onion.
  3. Add crumbled feta cheese on top of the vegetable mix.
  4. In a small bowl, whisk together olive oil and lemon juice. Pour over the salad mixture and toss gently.
  5. Season with salt and pepper to taste. Add chopped herbs for extra flavor.
  6. Chill in the refrigerator for about 15 minutes before serving to let flavors meld.
