  • 2 fresh lemons (zest and juice)
  • 1 medium cucumber (diced)
  • 1 cup cherry tomatoes (halved)
  • 1/4 red onion (thinly sliced)
  • 3/4 cup feta cheese (crumbled)
  • 1/4 cup fresh parsley (chopped)
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook orzo in salted boiling water according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. While the orzo cooks, prepare the vegetables: dice cucumber, halve cherry tomatoes, slice red onion, and chop parsley.
  3. Zest and juice the lemons into a bowl.
