  • 8 oz fusilli pasta
  • 1 cup diced cucumbers
  • 1 cup halved cherry tomatoes
  • 1/4 cup thinly sliced red onion
  • 1/4 cup chopped fresh basil
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the fusilli pasta in salted boiling water for 8-10 minutes until al dente. Drain and rinse under cold water.
  2. While the pasta cools, chop the cucumbers, cherry tomatoes, red onion, and basil into bite-sized pieces.
  3. In a small bowl or mason jar, whisk together olive oil, balsamic vinegar, salt, and pepper until well combined.
  4. In a large mixing bowl, combine the cooled pasta with chopped vegetables. Drizzle the dressing over the top and toss gently to coat.
  5. Cover and chill in the fridge for at least 30 minutes before serving.
  6. Serve chilled or at room temperature with extra basil as garnish if desired.
