Ingredients

  • 2 cups diced cucumbers (about 2 medium)
  • 1 cup cooked quinoa
  • 1 cup halved cherry tomatoes
  • 1/4 cup thinly sliced red onion
  • 1/4 cup chopped fresh parsley
  • 3 tablespoons freshly squeezed lemon juice
  • 5 tablespoons extra virgin olive oil
  • Salt & pepper to taste

Instructions

  1. Rinse quinoa under cold water. Combine with 2 cups water in a saucepan, bring to a boil, reduce heat, cover, and simmer for 15 minutes until absorbed. Fluff with a fork and cool.
  2. While quinoa cooks, slice cucumbers, cherry tomatoes, and red onion.
  3. In a bowl, whisk together lemon juice, olive oil, salt, and pepper.
  4. In a large bowl, combine cooled quinoa, vegetables, parsley, and dressing. Toss gently until mixed.
  5. Chill for at least 30 minutes before serving to enhance flavors.
