  • 1 cup quick-cooking couscous
  • 1 cup diced cucumbers
  • 1 cup halved cherry tomatoes
  • ½ cup chopped fresh parsley
  • ½ cup chopped fresh mint leaves
  • 3 tbsp freshly squeezed lemon juice
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Boil 1 cup of water in a saucepan. Once boiling, remove from heat, stir in the couscous, cover, and let sit for 5 minutes until fluffy.
  2. Dice cucumbers and halve cherry tomatoes. Finely chop parsley and mint.
  3. Fluff the couscous with a fork in a large bowl. Add cucumbers, tomatoes, parsley, and mint.
  4. Drizzle with olive oil and lemon juice; season with salt and pepper. Toss gently to combine.
  5. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
  6. Transfer to bowls or plates, garnish with extra mint if desired.
