  • 2 cups pitted fresh cherries
  • 1 small onion, finely chopped
  • 2 cups low-sodium vegetable broth
  • ½ cup heavy cream (or dairy-free alternative)

Instructions

  1. 1. Preheat your oven to 400°F (200°C). Wrap each beet in foil and roast on a baking sheet for about 60 minutes until tender. Allow them to cool before peeling.
  2. 2. In a medium saucepan, heat a splash of olive oil over medium heat. Sauté the chopped onion until translucent, about 5 minutes.
  3. 3. Roughly chop the peeled beets and pitted cherries. Add them to a blender along with the sautéed onions and vegetable broth. Blend until smooth.
