  • 1 tsp vanilla extract

Instructions

  1. Blend the mixed berries until smooth. If using frozen berries, allow them to thaw slightly first.
  2. Add honey or maple syrup to the berry mixture and pulse until combined but still chunky.
  3. In a separate bowl, mix coconut milk, vanilla extract, and Greek yogurt until smooth.
  4. Layer the berry puree and coconut mixture in popsicle molds: start with berry puree, then add the coconut layer, repeating until molds are filled.
  5. Freeze for at least four hours or overnight until solid.
  6. To remove from molds, run warm water over the outside briefly before pulling out the pops.
