  • 1 can (13.5 oz) full-fat coconut milk
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2 tsp curry powder
  • 1 tsp turmeric
  • 1 tsp ground cumin
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large pot over medium heat, add a splash of oil. Sauté the chopped onion until soft and translucent (about 5 minutes). Stir in minced garlic and grated ginger; cook for another minute until fragrant.
  2. Add curry powder, turmeric, and cumin; stir well to coat onions in spices and toast for about 1 minute.
  3. Stir in red lentils and vegetable broth; bring to a gentle boil, then reduce heat to low and simmer uncovered for about 15 minutes.
  4. Pour in coconut milk, stirring well to combine. Allow to simmer until lentils are tender (about another 5 minutes).
  5. Season with salt and pepper as needed. Serve garnished with fresh cilantro over rice or with naan.
