  • 1 lb elbow macaroni
  • 3 cups sharp cheddar cheese, shredded
  • 2 cups Monterey Jack cheese, shredded
  • 8 oz cream cheese
  • 2 cups whole milk
  • ½ cup unsalted butter
  • 2 large eggs
  • Salt and pepper to taste
  • 1 cup panko breadcrumbs (for topping)

Instructions

  1. Boil salted water in a large pot and cook elbow macaroni until al dente. Drain and set aside.
  2. In a saucepan over medium heat, melt butter. Add cream cheese and stir until smooth. Gradually whisk in milk until well combined.
  3. Mix in sharp cheddar and Monterey Jack cheeses; stir until melted and smooth. Season with salt and pepper.
  4. In a bowl, combine cooked macaroni with the cheese sauce. Beat eggs separately and mix them in for binding.
  5. Preheat oven to 350°F (175°C). Transfer the mixture to a greased baking dish and top with panko breadcrumbs.
  6. Bake uncovered for 30-40 minutes or until golden brown and bubbly.
