  • 34 lbs bone-in beef chuck roast
  • 4 dried guajillo peppers, soaked
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 4 cups beef broth
  • 12 corn tortillas (fresh preferred)
  • Fresh cilantro (for garnish)
  • Juice of 2 limes (for garnish)

Instructions

  1. Prepare the Meat: Trim excess fat from the beef and cut it into large chunks. Season generously with salt and pepper.
  2. Blend the Spice Mix: In a blender, combine soaked guajillo peppers, onion, garlic, cumin, oregano, and 2 cups of beef broth. Blend until smooth.
  3. Cook the Beef: Heat oil in a large pot over medium-high heat. Sear meat chunks until browned on all sides.
  4. Add Broth and Spice Mix: Pour in the blended spice mix and remaining beef broth. Simmer covered on low heat for about 3 hours until tender.
  5. Shred the Meat: Remove beef from pot and shred using two forks; return to pot to absorb juices.
  6. Assemble Your Tacos: Warm tortillas on a skillet. Fill each with shredded meat, top with cilantro and lime juice.
