  • 2 slices whole grain bread
  • 1/4 cup hummus
  • 1/2 cucumber, thinly sliced
  • 1 medium ripe tomato, sliced
  • 1/2 ripe avocado
  • 1 cup fresh baby spinach

Instructions

  1. Lay two slices of whole grain bread on a cutting board; optionally toast until golden brown.
  2. Spread 1/4 cup hummus generously on one side of each slice.
  3. Layer cucumber slices followed by tomato slices evenly across one slice.
  4. Halve the avocado, remove the pit, scoop out the flesh, and mash it slightly on top of the tomatoes.
  5. Add a handful of fresh spinach on top.
  6. Place the second slice of bread on top, press gently, and cut in half before serving.
