  • 2 medium zucchinis (spiralized)
  • 1 lb large shrimp (peeled and deveined)
  • 1 pint cherry tomatoes
  • 4 garlic cloves (minced)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • ¼ cup fresh parsley (chopped)
  • Salt and pepper to taste
  • ½ tsp red pepper flakes (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss cherry tomatoes with 1 tbsp olive oil, salt, and pepper on the baking sheet. Roast for 15-20 minutes until they burst.
  3. Heat remaining olive oil in a skillet over medium heat. Sauté minced garlic for about 1 minute until fragrant.
  4. Add shrimp, seasoning with salt, pepper, and red pepper flakes. Cook until pink and opaque, about 3 minutes per side.
  5. Stir in spiralized zucchini noodles; cook for another 2 minutes until tender but al dente.
  6. Remove from heat; add lemon juice and roasted tomatoes along with any pan juices.
  7. Serve garnished with parsley.
