  • 3/4 cup granulated sugar
  • 1/4 cup powdered sugar (for dusting)

  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1 tsp vanilla extract
  • 3/4 cup raspberry or apricot jam

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy. Stir in ground almonds.
  3. Add flour, cinnamon, nutmeg, ginger, and vanilla; mix until smooth.
  4. Wrap dough in plastic wrap and refrigerate for 1 hour.
  5. Roll out dough to 1/8-inch thick on a floured surface; use cookie cutters to shape cookies.
  6. Bake on parchment-lined sheets for 10–12 minutes until lightly golden; cool completely on wire racks.
  7. Spread jam on half of the cookies and top with cut-out centers. Dust with powdered sugar before serving.
