  • 1 lb Italian sausages (spicy or sweet)
  • 3 bell peppers (1 red, 1 yellow, 1 green), sliced
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 28 oz can crushed tomatoes (low-sodium)
  • 2 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté onions and garlic until soft, about 3 minutes.
  2. While cooking aromatics, wash and slice bell peppers; mix them in a bowl with salt, pepper, and Italian seasoning.
  3. In the same skillet, brown sausages on all sides for about 5 minutes until golden.
  4. Transfer bell peppers to the slow cooker; layer browned sausages on top. Pour crushed tomatoes over everything and sprinkle with additional Italian seasoning.
  5. Cover and cook on low for 6 hours or high for 3 hours without opening the lid.
  6. Serve hot over pasta or crusty bread; garnish with fresh herbs if desired.
