  • 2 tablespoons Dijon mustard
  • 1 teaspoon fresh thyme (chopped)
  • 1 teaspoon fresh rosemary (chopped)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Sauté onions until soft, then add garlic and cook until fragrant.
  3. Stir in chopped mushrooms and cook until moisture is released. Add wilted spinach, mixing well.
  4. Remove from heat and season with Dijon mustard, thyme, rosemary, salt, and pepper. Let cool slightly.
  5. Roll out puff pastry on a floured surface. Spoon filling onto one half of the pastry, fold over the other half, and seal edges.
  6. Place Wellington on a parchment-lined baking sheet. Brush with olive oil or egg wash for a golden finish.
