  • 1/4 cup coconut oil, melted
  • 2 tbsp maple syrup
  • 1 cup fresh blueberries (or frozen, thawed)
  • 1 tbsp arrowroot powder (or cornstarch)
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. In a bowl, mix flour and salt. Stir in melted coconut oil and maple syrup until crumbly. Add cold water, one tablespoon at a time, until dough forms. Chill for 30 minutes.
  2. Preheat oven to 375°F (190°C). Toss blueberries with arrowroot powder, maple syrup, vanilla, and salt in another bowl.
  3. Roll out chilled dough to 1/8-inch thick; cut out ghost shapes. Place half on parchment-lined baking sheets.
  4. Spoon blueberry filling onto each ghost shape's center; cover with another cut-out and seal edges.
  5. Bake for 20-25 minutes until golden brown. Cool slightly before serving.
