  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup granulated sugar
  • 1 tsp baking powder
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 1/2 cup powdered sugar

Instructions

  1. Preheat oven to 375°F (190°C). Line a jelly roll pan with parchment paper and lightly grease it.
  2. In one bowl, whisk together flour, cocoa powder, sugar, baking powder, and a pinch of salt. In another bowl, beat eggs until frothy; mix in vanilla extract. Combine wet and dry ingredients until smooth.
  3. Spread batter evenly in the prepared pan and bake for 12-15 minutes until it springs back when touched.
  4. Remove from oven and immediately roll the cake with parchment while warm; cool completely.
  5. Whip heavy cream until soft peaks form; gradually add powdered sugar and continue whipping until stiff peaks form. Unroll the cooled cake and spread whipped cream on top.
  6. Roll the cake back into its log shape with filling inside and dust with powdered sugar before slicing.
