  • 1/2 cup granulated sugar (for crust)
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar (for filling)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup tart cherry filling (store-bought or homemade)

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8 inch baking dish or line with parchment paper.
  2. In a bowl, mix softened butter and sugar until creamy. Add flour, baking powder, and salt; stir until crumbly.
  3. Press two-thirds of the crumb mixture into the bottom of the prepared dish.
  4. In another bowl, beat cream cheese until smooth. Gradually add sugar, then eggs one at a time, mixing well after each addition; blend in vanilla.
  5. Spread the cheesecake filling over the crust and dollop tart cherry filling on top.
  6. Sprinkle remaining crumb mixture over the cherry layer. Bake for 35-40 minutes until golden brown.
  7. Let cool completely before slicing into squares for serving.
