  • 2 cups sweet potatoes, peeled and diced
  • 1 cup yellow onion, diced
  • 1 cup celery, chopped
  • 1 tsp dried sage
  • 1 cup low-sodium vegetable broth
  • 1 cup whole wheat breadcrumbs
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until tender and caramelized.
  2. In a skillet over medium heat, sauté onions and celery in butter or olive oil for about 5-7 minutes until softened.
  3. Combine roasted sweet potatoes with the sautéed mixture in the skillet. Stir in dried sage and vegetable broth until well mixed.
  4. Add breadcrumbs, adjusting broth for desired moisture level.
  5. Transfer to a greased baking dish, cover with foil, and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until golden brown.
  6. Allow to cool slightly before serving.
