  • 2 medium sweet potatoes (about 400g)
  • 1 lb (450g) lean ground beef or lamb
  • 1 medium onion, finely chopped
  • 1 cup diced carrots (about 130g)
  • 1 cup frozen peas (about 150g)
  • 3 cloves garlic, minced
  • 1 cup low-sodium beef broth (240ml)
  • 2 tbsp olive oil (30ml)

Instructions

  1. Preheat your oven to 400°F (200°C). Prepare a muffin tin for cup shapes.
  2. Peel and cube the sweet potatoes; boil in salted water for about 15-20 minutes until soft. Drain and mash with olive oil until smooth.
  3. Heat olive oil in a skillet over medium heat; sauté onions, carrots, and garlic until tender, about 5 minutes.
  4. Add ground meat to the skillet; cook until browned. Stir in peas and beef broth; simmer for an additional 5 minutes.
  5. Layer the meat mixture into muffin tins, topping each with mashed sweet potatoes.
  6. Bake for 20-25 minutes until tops are golden brown.
