  • 2 medium sweet potatoes (400g)
  • 1 red bell pepper, chopped
  • 1 cucumber, diced
  • 1/2 red onion, finely diced
  • 1/4 cup fresh parsley, chopped
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice

Instructions

  1. Preheat oven to 425°F (220°C). Peel and dice sweet potatoes into cubes. Toss with 2 tablespoons of olive oil and salt.
  2. Spread sweet potato cubes on a parchment-lined baking sheet and roast for 25-30 minutes until tender.
  3. While roasting, chop the red bell pepper, cucumber, red onion, and parsley.
  4. In a small bowl, whisk together the remaining olive oil and lemon juice.
  5. Once sweet potatoes have cooled slightly, combine them with chopped vegetables in a large bowl.
  6. Drizzle with dressing and toss gently until well mixed. Season with salt and pepper if desired.
