Ingredients

  • 2 medium sweet potatoes (about 1 pound), peeled and thinly sliced
  • 4 cups fresh kale, chopped
  • 15 oz whole-milk ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant (about 1 minute). Add chopped kale, season with salt and pepper, and sauté until wilted (about 3 minutes). Set aside.
  3. In a baking dish, layer ricotta cheese followed by sweet potato slices, sautéed kale, and mozzarella. Repeat layers until all ingredients are used up, finishing with remaining mozzarella and Parmesan on top.
  4. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake an additional 15-20 minutes until golden brown and bubbly. Let cool slightly before slicing.
