  • 1 cup vegetable broth
  • 1 medium red onion, diced
  • 3 cloves garlic, minced
  • 1 cup bell peppers (any color), chopped
  • 2 tsp cumin
  • 2 tsp chili powder
  • 2 tbsp olive oil
  • Salt and pepper to taste

  2. Add diced sweet potatoes and chopped bell peppers; cook for another 5 minutes until they soften slightly.
