  • 2 lamb steaks (6 oz each)
  • 2 cups baby potatoes, halved
  • 1 cup carrots, chopped
  • 1 cup zucchini, sliced into half-moons
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 tbsp fresh rosemary, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a large sheet pan with parchment paper.
  2. In a bowl, combine potatoes, carrots, zucchini, garlic, olive oil, rosemary, salt, and pepper. Toss until coated.
  3. Season lamb steaks with salt and pepper on both sides.
  4. Spread veggies on one side of the sheet pan; place lamb steaks on the other side.
  5. Roast for 25-30 minutes or until lamb reaches an internal temperature of 145°F (63°C) for medium-rare.
  6. Let rest before serving; drizzle with pan juices.
