  • 2 cups fresh strawberries, sliced
  • 1 cup fresh rhubarb, chopped
  • ½ cup granulated sugar
  • 1 cup all-purpose flour
  • ½ cup unsalted butter, cold and cubed
  • 1 teaspoon salt
  • 34 tablespoons ice water

Instructions

  1. Preheat the oven to 400°F (200°C). Rinse and slice strawberries and chop rhubarb.
  2. In a bowl, combine strawberries, rhubarb, sugar, and 1 tablespoon flour; toss gently and set aside.
  3. In another bowl, mix flour and salt. Cut in cold butter until mixture resembles coarse crumbs.
  4. Gradually add ice water until dough holds together. Shape into a disc, wrap in plastic wrap, and chill for 30 minutes.
  5. Roll out chilled dough on a floured surface to about a quarter-inch thick circle.
  6. Transfer dough to a parchment-lined baking sheet. Spoon filling onto the center, leaving a 2-inch border. Fold edges over the filling.
  7. Bake for 35-40 minutes until golden brown. Serve warm or chilled with whipped cream or vanilla ice cream.
