Strawberry Cream Cheese Pastries are a delightful treat that perfectly combines the rich creaminess of cream cheese with the sweetness of fresh strawberries, all wrapped in flaky puff pastry. These pastries are not only easy to make but also impressive enough to serve at brunch or as a dessert. Enjoy them warm, perhaps with a dusting of powdered sugar for an extra touch of sweetness.

Ingredients

Scale
  • 1 cup fresh strawberries, hulled and diced
  • 8 oz cream cheese, softened
  • 1 sheet puff pastry, thawed
  • 1/4 cup granulated sugar (adjust based on berry ripeness)
  • 1 tsp vanilla extract
  • 1 egg + 1 tbsp water (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine softened cream cheese, sugar, diced strawberries, and vanilla extract until smooth.
  3. Roll out the thawed puff pastry on a floured surface. Cut into squares or circles about four inches wide.
  4. Spoon the strawberry-cream cheese mixture into the center of each pastry shape. Fold over to create triangles or pockets and seal edges with fingers or a fork.
  5. Whisk together the egg and water for the egg wash, then brush over each pastry.
  6. Bake for 15-20 minutes until golden brown. Allow to cool slightly before serving.
