Stir-Fried Beef Lasagna is a delightful fusion of classic Italian flavors and quick cooking techniques. This easy-to-make dish layers tender ground beef, fresh vegetables, and gooey cheese between no-boil lasagna noodles, making it perfect for busy weeknights or casual gatherings.

  • 1 lb lean ground beef (80/20)
  • 9 no-boil lasagna noodles
  • 15 oz whole milk ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 24 oz marinara sauce (jarred)
  • 1 medium zucchini (sliced thinly)
  • 1 bell pepper (any color, chopped)
  • 1 tsp olive oil
  • Salt and pepper to taste
  • 1 tsp dried Italian herbs

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium-high heat. Brown the ground beef for 7-10 minutes until fully cooked. Drain excess fat and season with salt, pepper, and herbs.
  3. Add zucchini and bell pepper to the skillet and sauté for about 5 minutes until softened.
  4. Spread a layer of marinara sauce in a baking dish. Layer three no-boil noodles, half of the beef-veggie mixture, dollops of ricotta, and mozzarella. Repeat layers, finishing with mozzarella on top.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes until bubbly and golden brown.
  6. Let sit for 5 minutes before serving with extra marinara sauce.
