  • 9 lasagna noodles
  • 4 cups fresh baby spinach
  • 15 oz whole milk ricotta cheese
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 large eggs
  • 2 cups marinara sauce
  • 3 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. Cook the lasagna noodles in boiling salted water until al dente. Drain and lay flat.
  3. Sauté garlic in a skillet until fragrant. Add spinach and cook until wilted. Let cool, then mix with ricotta, eggs, half of the mozzarella, salt, and pepper.
  4. Spread marinara sauce at the bottom of the baking dish. Layer three noodles, half of the spinach mixture, more sauce, and repeat until all ingredients are used. Top with remaining noodles, sauce, mozzarella, and Parmesan.
  5. Cover with foil and bake for 25 minutes; uncover for another 10 minutes until golden.
  6. Let cool for 10 minutes before slicing and serving.
