  • 1 package (17.3 oz) puff pastry sheets (2 sheets)
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • ½ cup crumbled feta cheese
  • 2 cloves garlic, minced
  • 1 egg (for egg wash)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a skillet, sauté chopped spinach in a splash of olive oil until wilted (about 3 minutes). Allow to cool.
  3. In a bowl, mix cooled spinach with ricotta, feta, garlic, salt, and pepper until well combined.
  4. Roll out puff pastry on a floured surface and cut into squares (3 inches wide).
  5. Place one tablespoon of filling in the center of each square. Fold diagonally and seal edges with a fork.
  6. Brush tops with egg wash and place on baking sheet lined with parchment paper.
  7. Bake for 20-25 minutes or until golden brown.
