  • 2 medium eggplants (about 400g), cut into bite-sized cubes
  • 1 cup bell peppers (any color), sliced
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp honey or maple syrup
  • 12 tsp Sriracha or chili paste (adjust to taste)
  • 1 tbsp sesame oil
  • 2 tbsp cooking oil

Instructions

  1. Prepare the vegetables by washing and cutting the eggplants into cubes and slicing the bell peppers. Mince the garlic and grate the ginger.
  2. In a bowl, whisk together the soy sauce, honey (or maple syrup), Sriracha (or chili paste), and sesame oil to create the sauce.
  3. Heat cooking oil in a large skillet over medium-high heat. Add eggplant cubes and sauté for about 5 minutes until golden brown and tender.
  4. Add sliced bell peppers, garlic, and ginger to the skillet; stir-fry for an additional 3 minutes until fragrant.
  5. Pour the prepared sauce over the vegetables in the skillet, stirring well to coat. Allow it to simmer for about 2 minutes.
  6. Serve hot over steamed rice or noodles, drizzling any leftover sauce on top.
