Instructions

  2. In a large bowl, whisk together flour, baking powder, baking soda, sugars, cinnamon, nutmeg, and salt.
  3. In another bowl, mix pumpkin puree, eggs, vegetable oil, and vanilla extract until smooth.
  4. Gently combine wet and dry ingredients using a spatula until just mixed—some lumps are okay.
  5. Fill each muffin cup about two-thirds full with batter; optionally sprinkle extra cinnamon on top.
  6. Bake for 20-25 minutes or until a toothpick inserted comes out clean. Let cool before serving.
